Ingredients:2 tablespoons olive oil2 small fresh chillies, deseeded and finely chopped2 cloves of garlic, peeled and finely chopped8 baby squid, prepared, cleaned and sliced into 1cm rings350 g Arborio riceA wine glass of white wine900 ml hot fish stock100 g cockles or shelled mussels200 g raw prawns, shelled (if frozen, make sure they’re fully defrosted)8…

  • A wine glass of white wine
  • 900 ml hot fish stock
  • 100 g cockles or shelled mussels
  • 200 g raw prawns, shelled (if frozen, make sure they’re fully defrosted)
  • 8 raw king prawns, heads and tails left on (if frozen, make sure they’re fully defrosted)
  • Fine salt and freshly ground black pepper
  • Optional: a handful of fresh flat-leaf parsley, picked leaves
