Avocado, Mozzarella & Tomato Salad

A simple salad with fresh mozzarella, avocado, and grape tomatoes tossed with olive oil and lemon juice.

This salad is refreshing and filling, it’s very similar to a Caprese salad but without the basil, and balsamic vinegar. A couple of years ago, my sister in law made this salad for dinner at her house and I was hooked! It is a perfect salad to make for Easter Sunday this weekend.

My favorite ingredient is the fresh mozzarella, it is a semi-soft cheese that adds the perfect texture to this salad; it will not taste the same with regular mozzarella. You can buy the fresh mozzarella in most grocery stores in the specialty cheese section or, although I have never attempted, you can make it yourself.

First, cube the mozzarella and avocados. Then slice each grape tomato in half. Chop the green onion, dill, and parsley and juice half of a lemon. I just squeezed my lemon to remove the juice.

Place all of the ingredients listed in the recipe in a medium bowl.

Gently, mix the salad to combine the ingredients. Try not over mix or the avocado will turn to mush and you will have a mozzarella guacamole ;).

Since this salad contains avocado, it is best to enjoy right away. The lemon juice does keep the avocado from browning, so if you plan on eating the salad later on in the day, cover with plastic wrap and refrigerate until ready to serve. This recipe makes enough salad to serve of 3-4 people, and it can easily be doubled to accommodate more guests. My husband and I love this salad so much that we can both eat it for dinner along with a lighter meal.

Ingredients
  • 1 avocado
  • 6 oz grape tomatoes (half of a pack)
  • ½ ball of fresh mozzarella (4 oz)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon green onion, chopped
  • ½ teaspoon salt (add more if needed)
  • ¼ teaspoon pepper
Instructions
  1. Cube the mozzarella and avocados.
  2. Slice each grape tomato in half.

Our bodies need all 3 macro-nutrients (carbs, protein, and fat) daily in order to function and this smoothie covers them all. There are so many vitamins in this smoothie from all of the fruits and veggies. The avocado is a great source of healthy fat, and along with all of the fiber from the fruits and spinach, it keeps you full!  They all combine to make a perfect meal for one person, or as a snack to share for two.

Last year, after I started tracking my daily macros and calories during the weekdays, I noticed that I was not eating enough protein. Once I increased my protein consumption, I noticed an increased energy level and better workouts overall. Just to be clear, protein will not make you gain muscle; it is actually very difficult for a female to gain muscle by just increasing protein. Also, protein powder is not for weight loss either. Weight loss is achieved from moving more and eating less calories overall. It does not matter how much more protein, carbs, or fat you eat, just as long as you eat less “energy” a.k.a food, so that your body can use your fat reserves for energy.

I used this protein powder, which is plant-based and adds to the greenness of the smoothie. Last year, I was on a lucky streak and won many giveaways, one of which was the protein powder which I am now creatively trying to use up! Hemp protein is plant based, and actually very good for your body, I have to add a lot of fruits to my smoothie to blot out the strong earthy flavor of hemp.

The smoothie ingredients are simple: pineapple, banana, orange, avocado, spinach, protein powder of your choice, and a sweetener (optional). Plus some water and ice to thin out the smoothie. Protein Green Smoothie - Her Cup of Joy (2 of 32)

 

First, add all of the ingredients, except for the ice, to a blender and blend until smooth.

  • 1-2 teaspoons sweetener of choice (optional)
